I just wanted to give a SHOUT OUT to the "cooler weather" which has allowed us to use THE OVEN more. We made these STUFFED PEPPERS with cooked rice, an assortment of cherry tomatoes from our local CSA, some squash, some asparagus, and bits and pieces of GARDEN BURGER, which Missy cooked and then crumbled up...throw in some herbs and seasonings, bake in the oven, and viola...satisfied stomach.
