Since Halloween was yesterday I thought it would be a good idea to send you all a recipe I have been using this season. It is for these yummy chocolate chip pumpkin cupcakes that you see above! I adapted it from this recipe I found. This is a great recipe for Thanksgiving, too! Here is my recipe...
Chocolate Chip Pumpkin Cake
1¾ C pumpkin puree
1 C oil
2 bananas
2 C sugar
2 C flour
¼ C maple syrup
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp fresh nutmeg
½ tsp salt
½ tsp ground ginger
¼ tsp ground cloves
¾ C chocolate chips
Preheat oven to 350°F. Mash up the banana and mix it with the pumpkin, sugar, syrup, and oil. In another bowl mix together flour, soda, powder, salt, and spices. Next add all this to the pumpkin mixture and then fold in the chocolate chips. Put in prepared cupcake tin and fill with batter. Bake for 20 minutes.
